Seafood and Sausage Gumbo

This is a relatively easy gumbo recipe that is rib-stickin’ good. Try it tonight!

Ingredients

  • 1 large onion diced
  • 3 bell peppers diced, any color (I used 2 red, 1 orange)
  • 2 pounds ocra frozen (2 x 16 ounce bags)
  • 1/2 cup vegetable oil
  • 6 tablespoons all-purpose flour
  • 6 garlic cloves pressed or minced
  • 1 can diced tomatoes (14.5 ounce) with juices
  • 6 cups clam juice or fish stock
  • 1 box 99% fat free chicken broth (32 ounce)
  • 2 bay leaves

Honey-Moist Cornbread

Ingredients

  • 1 c (250 mL) all-purpose flour
  • 1 c (250 mL) yellow cornmeal
  • 1/4 c (50 mL) sugar
  • 1 tb (15 mL) baking powder
  • 1/2 ts (3 mL) salt
  • 1 c (250 mL) whipping cream
  • 1/4 c (50 mL) vegetable oil
  • 1/4 c (50 mL) honey
  • 2 Eggs, slightly beaten

Low Country Shrimp and Grits

A traditional South Carolina Low Country dish of succulent shrimp in a rich sauce, that unites two extremes of corn…fresh corn and grits. The recipe uses authentic stone-ground grits which require thorough cooking and take a bit longer to prepare than the quick or instant types. But as any true grits purist will tell you…real Old South flavor and texture are only found in old-fashioned stone-ground grits!
